del pan es el <\/span><b><span data-contrast=\"none\">porcentaje de agua que lleva una masa con relaci\u00f3n a la cantidad de harina de la misma<\/span><\/b><span data-contrast=\"none\">. Cuanta m\u00e1s agua tenga, m\u00e1s hidratada ser\u00e1 esa masa. Y, a la inversa: a menor cantidad de agua, menor hidrataci\u00f3n.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559740&quot;:276}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">En panader\u00eda, cuando hablamos de hidrataci\u00f3n, se puede hacer referencia a: a la hidrataci\u00f3n del pan en s\u00ed, pero tambi\u00e9n a la hidrataci\u00f3n de la masa madre. Los <\/span><b><span data-contrast=\"none\">porcentajes de hidrataci\u00f3n<\/span><\/b><span data-contrast=\"none\"> en un pan suelen oscilar entre un 50 y un 90%; mientras que en la masa madre, a no ser que se especifique lo contrario, el porcentaje suele ser del 100%.<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559740&quot;:276}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Una hidrataci\u00f3n del 100% significa que esa madre lleva la misma cantidad de agua que de harina (100% hace referencia a la cantidad de agua con respecto a la harina: si lleva 100 g de harina, llevar\u00e1 su 100% en agua, es decir, 100 g de agua).<\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559740&quot;:276}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Con otro ejemplo, si tenemos una masa de pan con un porcentaje de hidrataci\u00f3n del 60%, significa que, por 1000 g de harina, tendremos 600 g de agua. <\/span><span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559740&quot;:276}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Este porcentaje es extremadamente \u00fatil, ya que <strong>podemos aplicarlo a cualquier cantidad de harina<\/strong>, obteniendo siempre la misma hidrataci\u00f3n en panes de distintos tama\u00f1os. Una hidrataci\u00f3n media es ideal para principiantes, porque se trata de masas muy f\u00e1ciles de amasar, que casi no se pegan a las manos. Sobre la encimera limpia, sin aceite ni harina, coger la masa por abajo y elevarla, volte\u00e1ndola en el aire. Dejarla caer sobre la encimera y estirarla ligeramente hacia el cuerpo o hacia afuera. Soltar la masa. Repetir el proceso hasta que se desarrolle el gluten y la masa est\u00e9 fina, el\u00e1stica y manejable.
