{"id":13936,"date":"2014-01-27T11:53:22","date_gmt":"2014-01-27T09:53:22","guid":{"rendered":"https:\/\/www.conasi.eu\/blog\/?p=13936"},"modified":"2021-03-18T12:46:14","modified_gmt":"2021-03-18T11:46:14","slug":"por-que-remojar-las-legumbres","status":"publish","type":"post","link":"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/por-que-remojar-las-legumbres\/","title":{"rendered":"Por qu\u00e9 remojar las legumbres"},"content":{"rendered":"<p>Las <strong>legumbres<\/strong> y especialmente la fina piel que las recubre, contienen <strong>oligosac\u00e1ridos<\/strong> (un tipo de hidrato de carbono) cuya mol\u00e9cula est\u00e1 formada por varias mol\u00e9culas de az\u00facares simples, tales como la galactosa.<\/p>\n<p>Los humanos no poseemos <a title=\"\u00bfQu\u00e9 son las enzimas?\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/que-son-las-enzimas\/\" target=\"_blank\" rel=\"noopener noreferrer\">enzimas<\/a> capaces de descomponer estos oligosac\u00e1ridos en nuestro intestino. Las bacterias del colon, especialmente las del g\u00e9nero <strong>Clostridium<\/strong>, s\u00ed los descomponen convirti\u00e9ndolos en <strong>gases<\/strong> como el di\u00f3xido de carbono, el hidr\u00f3geno y el metano.<\/p>\n<figure id=\"attachment_13938\" class=\"thumbnail wp-caption aligncenter\" style=\"width: 460px\"><a href=\"https:\/\/www.conasi.eu\/blog\/wp-content\/uploads\/2014\/01\/garbanzos-remojo.jpg\"><img decoding=\"async\" class=\"size-full wp-image-13938\" title=\"Garbanzos en remojo\" src=\"https:\/\/www.conasi.eu\/blog\/wp-content\/uploads\/2014\/01\/garbanzos-remojo.jpg\" alt=\"Garbanzos en remojo\" width=\"450\" height=\"287\" \/><\/a><figcaption class=\"caption wp-caption-text\">Garbanzos en remojo<\/figcaption><\/figure>\n<h2>\u00bfC\u00f3mo evitar la formaci\u00f3n de los molestos gases?<\/h2>\n<p>Para evitar o minimizar la formaci\u00f3n de gases y la flatulencia a nivel intestinal tras consumir legumbres podemos optar por lo siguiente:<\/p>\n<p>&#8211; <strong>Remojo<\/strong>: tras 12 horas de remojo, desaparece la mayor parte de los oligosac\u00e1ridos productores de gas. Es aconsejable cambiar el agua una o dos veces. El remojo es m\u00e1s efectivo si el agua que se vierte sobre las legumbres est\u00e1 hirviendo.<\/p>\n<p>&#8211; <strong>Eliminar las pieles<\/strong>: se puede hacer manualmente antes de cocinarlas o bien pas\u00e1ndolas por un pasapur\u00e9s una vez que est\u00e1n cocinadas.<\/p>\n<p>&#8211; <strong>Ayuda digestiva<\/strong>: ingerir un preparado farmac\u00e9utico que se conoce en algunos pa\u00edses como \u201c<strong>beano<\/strong>\u201d. Se presenta en forma de comprimidos inocuos cuya composici\u00f3n es la <strong><a title=\"Enzima\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/que-son-las-enzimas\/\" target=\"_blank\" rel=\"noopener noreferrer\">enzima<\/a> <\/strong><strong>alfa-galactosidasa<\/strong>, capaz de desdoblar los oligosac\u00e1ridos de las legumbres antes de que lleguen al intestino grueso y sean metabolizados por las bacterias productoras de gas.<\/p>\n<p>Las legumbres no pueden comerse crudas ya que contienen <a title=\"Antinutrientes\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/antinutrientes-e-inhibidores-enzimaticos\/\" target=\"_blank\" rel=\"noopener noreferrer\">factores antinutritivos<\/a> y t\u00f3xicos tales como inhibidores de las proteasas, hematoglutininas, etc. El remojo, la cocci\u00f3n, la germinaci\u00f3n u otras formas de procesarlas destruyen estas sustancias.<\/p>\n<p><em><strong>\u00a1Salud para todos!<\/strong><\/em><\/p>\n<p>Un art\u00edculo de\u00a0Isabel Cruz, Nutrici\u00f3n y Naturopat\u00eda<\/p>\n<p>&nbsp;<\/p>\n<p>Bibliograf\u00eda: Enciclopedia de los alimentos y su poder curativo.
