En la\u00a0<a title=\"Panificadora: condiciones para la fermentaci\u00f3n = condiciones para hacer pan\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/condiciones-para-la-fermentacion-condiciones-para-hacer-pan\/\" target=\"_blank\" rel=\"noopener noreferrer\">panificadora<\/a> la cantidad de harinas, almidones y aglutinantes ir\u00e1 desde los 250 a los 1200\u00a0gr en total, \u00a0dependiendo del tama\u00f1o del\u00a0<a title=\"C\u00f3mo elegir la panificadora m\u00e1s adecuada a mis necesidades\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/como-elegir-la-panificadora-mas-adecuada-a-mis-necesidades\/\" target=\"_blank\" rel=\"noopener noreferrer\">modelo de la panificadora<\/a>.<\/p>\n<h3>La harina base:<\/h3>\n<p>Recomendamos elaborar <strong>nuestra propia mezcla de harinas<\/strong> y a partir de una buena base ir jugando con las mezclas entre las harinas de base y\/o a\u00f1adir alguna de las complementarias. Como harinas de base recomendamos las siguientes:<\/p>\n<ul>\n<li>harina de <a title=\"\u00bfQu\u00e9 cereales no contienen gluten?: El arroz integral\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/cereales-no-contienen-gluten-arroz-integral\/\" target=\"_blank\" rel=\"noopener noreferrer\">arroz integral<\/a><\/li>\n<li>harina de<a title=\"3 pseudocereales: quinoa, sarraceno y amaranto\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/agricultura-biodinamica-bauckhof\/3-pseudocereales-quinoa-sarraceno-y-amaranto\/\" target=\"_blank\" rel=\"noopener noreferrer\"> trigo sarraceno<\/a><\/li>\n<li>harina de<a title=\"avena\" href=\"https:\/\/www.conasi.eu\/harinas\/1541-harina-avena-integral-ecologica.html?search_query=avena&amp;results=5\" target=\"_blank\" rel=\"noopener noreferrer\"> avena<\/a><\/li>\n<li>harina de sorgo<\/li>\n<li>harina <a title=\"\u00bfQu\u00e9 cereales no contienen gluten?: El mijo\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/cereales-no-contienen-gluten-mijo\/\" target=\"_blank\" rel=\"noopener noreferrer\">mijo<\/a><\/li>\n<\/ul>\n<h3>Las harinas complementarias:<\/h3>\n<p>Estas harinas son opcionales y nos ampliar\u00e1n la gama de matices, textura y el valor nutricional del pan aport\u00e1ndonos un\u00a0sabor m\u00e1s pronunciado y una textura m\u00e1s compacta.<\/p>\n<figure id=\"attachment_41751\" class=\"thumbnail wp-caption aligncenter\" style=\"width: 910px\"><a href=\"https:\/\/www.conasi.eu\/blog\/wp-content\/uploads\/2017\/06\/harina-de-sorgo.jpg\"><img decoding=\"async\" class=\"wp-image-41751 size-full\" title=\"harinas sin gluten aptas para celiacos. \" src=\"https:\/\/www.conasi.eu\/blog\/wp-content\/uploads\/2017\/06\/harina-de-sorgo.jpg\" alt=\"distintos tipos de harinas.\" width=\"900\" height=\"300\" \/><\/a><figcaption class=\"caption wp-caption-text\">Harina de sorgo, sus propiedades son similares a las del ma\u00edz pero con menos prote\u00ednas y propiedades cal\u00f3ricas.<\/figcaption><\/figure>\n<ul>\n<li>Proporci\u00f3n: menos del 30% del contenido total de la mezcla de harinas*.<\/li>\n<li>Ejemplo: para un pan de 300 gr de mezcla de harinas\u00a0podemos usar menos de 100 gr de harinas complementarias.<\/li>\n<li style=\"text-align: left;\">Tipos: harina de <a title=\"3 pseudocereales: quinoa, sarraceno y amaranto\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/agricultura-biodinamica-bauckhof\/3-pseudocereales-quinoa-sarraceno-y-amaranto\/\" target=\"_blank\" rel=\"noopener noreferrer\">quinoa<\/a>, garbanzo, <a title=\"\u00bfQu\u00e9 cereales no contienen gluten?:El Teff\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/cereales-no-contienen-gluten-teff\/\" target=\"_blank\" rel=\"noopener noreferrer\">teff<\/a>, coco, <a title=\"Ver harina de casta\u00f1as ecol\u00f3gica\" href=\"https:\/\/www.conasi.eu\/harinas\/1040-harina-de-castana.html\" target=\"_blank\" rel=\"noopener noreferrer\">casta\u00f1as<\/a>, <a title=\"\u00bfQu\u00e9 cereales no contienen gluten?: El ma\u00edz\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/cereales-no-contienen-gluten-maiz\/\" target=\"_blank\" rel=\"noopener noreferrer\">ma\u00edz<\/a>, <a title=\"3 pseudocereales: quinoa, sarraceno y amaranto\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/agricultura-biodinamica-bauckhof\/3-pseudocereales-quinoa-sarraceno-y-amaranto\/\" target=\"_blank\" rel=\"noopener noreferrer\">amaranto<\/a>, frutos secos molidos, harina de <a title=\"chufa\" href=\"https:\/\/www.conasi.eu\/alimentacion-ecologica\/648-chufa.html\" target=\"_blank\" rel=\"noopener noreferrer\">chufa<\/a>.<\/li>\n<\/ul>\n<h3>Los almidones y f\u00e9culas:<\/h3>\n<p>Los almidones ayudan a reconstruir la uni\u00f3n, la textura y la estructura que el gluten proporciona, raz\u00f3n por la cual es un ingrediente que, sin ser indispensable, ayuda a crear un pan m\u00e1s esponjoso.<\/p>\n<ul>\n<li>Proporci\u00f3n: entre un 40-55% del total de la mezcla de harinas*.<\/li>\n<li>Por ejemplo: para un pan de 300 gr harina substituiremos entre\u00a0120-165 gr de harina por almid\u00f3n.<\/li>\n<li>Tipos: almid\u00f3n de tapioca, arrurruz, f\u00e9cula de patata.<\/li>\n<\/ul>\n<h3>Los aglutinantes:<\/h3>\n<p><a title=\"Semana 6, revitaliza tu vida \u2013 Las semillas\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/consejos-de-salud-consejos-de-salud\/revitaliza-tu-vida-7-cambios-sencillos-para-la-salud\/\" target=\"_blank\" rel=\"noopener noreferrer\">Las semillas<\/a> de <a title=\"Semillas de ch\u00eda ecol\u00f3gicas\" href=\"https:\/\/www.conasi.eu\/semillas\/777-semillas-de-chia-ecologicas.html\" target=\"_blank\" rel=\"noopener noreferrer\">chia<\/a>, lino o psyllium molidas al momento y combinadas entre si, ayudar\u00e1n a aglutinar y actuar\u00e1n como un gel que aportar\u00e1 elasticidad al pan, sin necesidad de tener que utilizar huevo.<\/p>\n<p>Proporci\u00f3n: A\u00f1adir a m\u00e1s a m\u00e1s, entre un 25-50% de la cantidad total de la mezcla de harinas.<\/p>\n<ul>\n<li>Ejemplo: para un pan de 300 gr de la mezcla de harinas a\u00f1adir\u00a0entre 75-150 gr de semillas a parte.<\/li>\n<li><strong><a title=\"La goma guar:\" href=\"https:\/\/www.conasi.eu\/productos-sin-gluten\/1043-goma-de-guar-espesante.html\" target=\"_blank\" rel=\"noopener noreferrer\">La goma guar:<\/a> <\/strong>podemos usarla para darle el efecto algutinante, a\u00f1adiremos entre 1-1,5 cucharadas de postre por cada 300 gr de \u00a0la mezcla de harinas.<\/li>\n<\/ul>\n<figure id=\"attachment_41750\" class=\"thumbnail wp-caption aligncenter\" style=\"width: 910px\"><img decoding=\"async\" class=\"wp-image-41750 size-full\" title=\"Existen distintos tipos de harinas sin gluten. \" src=\"https:\/\/www.conasi.eu\/blog\/wp-content\/uploads\/2017\/06\/harina-de-quinoa.jpg\" alt=\"tipos de harinas alternativas al trigo.\" width=\"900\" height=\"300\" \/><figcaption class=\"caption wp-caption-text\">Harina de quinoa.<\/figcaption><\/figure>\n<p><strong>Combinaciones posibles: <\/strong><\/p>\n<ul>\n<li>harina base= 100%<\/li>\n<li>harina base= 70-100% + harina complementaria= 0-30%<\/li>\n<li>harina base 1= 0-50% + harina base 2= 0-50%<\/li>\n<li>harina base 1= 0-50% + harina base 2= 0-50%+ harina complementaria= 0-30%<\/li>\n<li>almidones = mezcla de harinas 45-100% + almid\u00f3n 0-55%<\/li>\n<li>algutinantes = 25-50% (sumado a la mezcla de harinas y almid\u00f3n)<\/li>\n<li>Ejemplo: para la receta de pan que viene a continuaci\u00f3n que lleva 400 gr de mezcla de harinas + almid\u00f3n, usamos una mezcla de harinas base de 240 gr \u00a0de mijo y arroz integral+ 40 gr de harina de teff complementaria (17%) + 120 gr de almidones\u00a0(30%) + 125 gr de aglutinantes en forma de semillas de ch\u00eda molidas.<\/li>\n<\/ul>\n<h3>La levadura de pan:<\/h3>\n<p>El uso de la cantidad adecuada de <a title=\"Levaduras\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/levaduras-ecologicas-en-polvo-madre-pasteleria\/levaduras\/\" target=\"_blank\" rel=\"noopener noreferrer\">levadura<\/a> ser\u00e1 un aspecto clave en el resultado de nuestro pan.<\/p>\n<p>Proporci\u00f3n: recomendamos 1-2 cucharadas de postre de <a title=\"levadura biovegan\" href=\"https:\/\/www.conasi.eu\/levaduras-ecologicas-biovegan\/293-levadura-de-pan-ecologica.html?search_query=levad\" target=\"_blank\" rel=\"noopener noreferrer\">levadura biovegan<\/a> para 300 gr de la mezcla de harinas.<\/p>\n<p><strong>Para mejorar la gasificaci\u00f3n:<\/strong><\/p>\n<ul>\n<li>A\u00f1adir \u00bd cucharadita de <strong>bicarbonato + 2 cucharaditas de vinagre de manzana<\/strong> por cada 300 gr de la mezcla de harinas.<\/li>\n<li>Elaborar el pan con <strong><a title=\"Tutorial: C\u00f3mo elaborar la levadura madre\" href=\"https:\/\/www.conasi.eu\/blog\/consejos-de-salud\/tutorial-como-elaborar-la-levadura-madre\/\" target=\"_blank\" rel=\"noopener noreferrer\">masa madre natural<\/a>:<\/strong> ser\u00e1 sin duda la opci\u00f3n mas saludable y digestiva que requiere de mayor previsi\u00f3n de tiempos de <a title=\"Panificadora: condiciones para la fermentaci\u00f3n = condiciones para hacer pan\" href=\"https:\/\/www.conasi.eu\/blog\/productos\/condiciones-para-la-fermentacion-condiciones-para-hacer-pan\/\" target=\"_blank\" rel=\"noopener noreferrer\">fermentaci\u00f3n <\/a>m\u00e1s prolongados, y da como resultado un pan fermentado m\u00e1s \u00e1cido, digestivo y duradero.
