Lo podemos tomar en guisos, sopas, salteado, hacer unas hamburguesitas de tempeh, verduras y alg\u00fan cereal integral cocido como el trigo sarraceno, as\u00ed como otra buena variedad de elaboraciones. En esta ocasi\u00f3n vamos a\u00a0preparar\u00a0<\/span><span data-slate-node=\"text\"><strong>tempeh encebollado<\/strong><\/span><span data-slate-node=\"text\">, una de las mejores formas de tomarlo ya que la combinaci\u00f3n de la cebolla guisada con el tempeh es realmente deliciosa. Si, adem\u00e1s, a\u00f1adimos miso y tomates secos, como vamos a hacer en esta ocasi\u00f3n, se realzar\u00e1 a\u00fan m\u00e1s el sabor.<\/span><\/p>\n<p data-slate-node=\"element\"><span data-slate-node=\"text\">En esta receta vamos a emplear el <\/span><a href=\"https:\/\/www.conasi.eu\/blog\/recetas\/legumbres\/tempeh-alubias-negras\/\" target=\"_blank\" rel=\"noopener noreferrer\" data-slate-node=\"element\" data-slate-inline=\"true\"><span data-slate-node=\"text\">tempeh de quinoa y alubias negras<\/span><\/a><span data-slate-node=\"text\">, que ya aprendimos a hacer la vez anterior. Sin embargo, podemos tambi\u00e9n hacer esta misma receta con <\/span><a href=\"https:\/\/www.conasi.eu\/blog\/recetas\/tempeh-garbanzos\/\" target=\"_blank\" rel=\"noopener noreferrer\" data-slate-node=\"element\" data-slate-inline=\"true\"><span data-slate-node=\"text\">tempeh de garbanzos<\/span><\/a><span data-slate-node=\"text\"> o de soja. Adem\u00e1s del tempeh, nuestra receta va a llevar otro alimento fermentado, que es el <\/span><span data-slate-node=\"text\"><strong>miso<\/strong><\/span><span data-slate-node=\"text\">.\u00a0<\/span><\/p>\n<h3 data-slate-node=\"element\"><span data-slate-node=\"text\">Un plato cardiosaludable<\/span><\/h3>\n<p data-slate-node=\"element\"><span data-slate-node=\"text\">Resulta que el <\/span><a href=\"https:\/\/www.conasi.eu\/cocina-macrobiotica-y-japonesa\/2573-miso-de-garbanzos-ecologico-no-pasteurizado-kensho.html\" target=\"_blank\" rel=\"noopener noreferrer\" data-slate-node=\"element\" data-slate-inline=\"true\"><span data-slate-node=\"text\">miso<\/span><\/a><span data-slate-node=\"text\">, aunque contiene una buena cantidad de sal, esto no parece ser un problema para personas con hipertensi\u00f3n, tal y como se muestra en estudios recientes realizados al respecto. El miso se elabora con granos integrales (normalmente <\/span><a href=\"https:\/\/www.conasi.eu\/fermentados\/971-genmai-miso-de-arroz.html\" target=\"_blank\" rel=\"noopener noreferrer\" data-slate-node=\"element\" data-slate-inline=\"true\"><span data-slate-node=\"text\">arroz<\/span><\/a><span data-slate-node=\"text\"> o cebada), soja, sal y el <\/span><a href=\"https:\/\/www.conasi.eu\/fermentados\/3925-mugi-miso-ecologico-no-pasteurizado-kensho.html\" target=\"_blank\" rel=\"noopener noreferrer\" node=\"element\" inline=\"true\"><span data-slate-node=\"text\">fermento koji<\/span><\/a><span data-slate-node=\"text\">. Resulta que la prote\u00edna de soja ha demostrado inhibir la actividad de la enzima convertidora de angiotensina\u00a0(ACE, por sus siglas en ingl\u00e9s) (1), la cual tiene una acci\u00f3n vasoconstrictora y, por ello, aumenta la presi\u00f3n arterial. Por tanto, la inhibici\u00f3n de esta enzima supone una buena estrategia para reducir la presi\u00f3n arterial. Esta es la raz\u00f3n por la que el miso, aunque presente un elevado contenido en sodio, en realidad no aumenta la presi\u00f3n arterial, sino todo lo contrario, ya que su prote\u00edna parece actuar como un inhibidor de la ACE, lo cual dar\u00eda lugar a una reducci\u00f3n de la presi\u00f3n arterial.\u00a0<\/span><\/p>\n<p data-slate-node=\"element\"><span data-slate-node=\"text\">Estas son las posibles razones por las que el consumo de miso, no parece ser un problema para personas con hipertensi\u00f3n, lo cual tambi\u00e9n se ha comprobado en estudios cl\u00ednicos. Un estudio japon\u00e9s de 2017, publicado en <\/span><span data-slate-node=\"text\"><em>el Internal Medicine Journal<\/em><\/span><span data-slate-node=\"text\">, llevado a cabo en japoneses de mediana edad, demostr\u00f3 que el consumo de miso no estaba asociado con una mayor presi\u00f3n arterial y, adem\u00e1s, se vio que pod\u00eda reducir ligeramente la frecuencia cardiaca, que es un marcador de riesgo cardiovascular (2). Los pacientes con hipertensi\u00f3n que presentan una elevada frecuencia cardiaca tienen mayor riesgo de accidentes cardiovasculares y mortalidad toda causa (3). Por ello, el hecho de que el consumo de miso pueda, ligeramente, reducir esa frecuencia cardiaca, parece ser muy interesante.\u00a0<\/span><\/p>\n<p data-slate-node=\"element\" data-slate-node=\"text\">Por otra parte, nuestra receta est\u00e1 compuesta por otros <\/span><span data-slate-node=\"text\"><strong>alimentos cardiosaludables<\/strong><\/span><span data-slate-node=\"text\">: los granos integrales (en este caso vamos a emplear <\/span><a href=\"https:\/\/www.conasi.eu\/cereales-y-pasta\/2148-arroz-integral-calasparra-saco.html\" target=\"_blank\" rel=\"noopener noreferrer\" data-slate-node=\"element\" data-slate-inline=\"true\"><span data-slate-node=\"text\">arroz integral<\/span><\/a><span data-slate-node=\"text\">) y la cebolla, la cual abunda en flavonoides, especialmente en quercetina, con acci\u00f3n antitromb\u00f3tica y, su consumo, principalmente en estudios realizados en animales (<\/span><span data-slate-node=\"text\"><em>in
