el tiempo siempre est\u00e1 relacionado con la temperatura ambiente o la temperatura controlada a la que lo vayas a fermentar. As\u00ed que tienes que tener en cuenta que, <strong>a mayor temperatura, el proceso ser\u00e1 mas r\u00e1pido y a menor temperatura el proceso se ralentizar\u00e1<\/strong>.<\/p>\n<p>En mi opini\u00f3n, lo m\u00e1s importante es que trabajes la observaci\u00f3n y vayas probando para saber en que momento te gusta m\u00e1s y as\u00ed parar el proceso. Como norma general, para la <strong>fermentaci\u00f3n de quesos de frutos secos que son semiduros,<\/strong> el mejor proceso es dejarlo a temperatura ambiente durante 24 horas y posteriormente curarlo en la nevera durante 2 semanas.<\/p>\n<p>Si lo haces de esta forma, tienes una parte del proceso en el cual la fermentaci\u00f3n va a ser r\u00e1pida y luego con la temperatura de la nevera el proceso se ralentizar\u00e1 y se ir\u00e1 curando y adquiriendo una textura m\u00e1s dura para luego poder cortarlo con cuchillo.<\/p>\n<p>Por otro lado, para conseguir un buen resultado, lo primero que debes saber es <strong>que tipo de microorganismos est\u00e1n proliferando<\/strong> para conocer que caracter\u00edsiticas espec\u00edficas tiene. En el segundo caso, el resultado ser\u00e1 siempre similar ya que vas a controlar el crecimiento de microorganismos con la temperatura. Te da el control del proceso.<\/p>\n<p>La temperatura id\u00f3nea para la fermentaci\u00f3n de un <strong>queso b\u00e1sico de frutos secos est\u00e1 entre 6 y 17 \u00baC<\/strong> pero esto no quiere decir que sea una temperatura \u201ccorrecta\u201d. Existen quesos que se maduran a 20 \u00baC y sin embargo, otros a 5 \u00baC y es esta la clave para conseguir un resultado u otro.<\/p>\n<p>Lo m\u00e1s interesante es hacer con la misma mezcla diferentes pruebas y as\u00ed decidir cu\u00e1l es el que te gusta m\u00e1s.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Curados\"><\/span>Curados<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>En la mayor\u00eda de alimentos fermentados, existe un proceso de <strong>fermentaci\u00f3n inicial<\/strong> en el cual las bacterias crecen r\u00e1pidamente y transforman el alimento de tal manera que no dejan que se contamine. Puede ser por un cambio en el pH o porque simplemente ellas han tomado el control del alimento.\u00a0Este proceso es necesario, porque de lo contrario pondr\u00edamos en peligro el resultado que queremos conseguir, tendr\u00edamos m\u00e1s posibilidades de contaminaci\u00f3n.<\/p>\n<p>En el caso de los quesos veganos, es importante que adem\u00e1s, de notar que el queso <strong>aumenta de volumen,<\/strong> se crea una <strong>corteza seca<\/strong>. Tenemos que tener en cuenta que cuanta menos humedad haya en la corteza, la contaminaci\u00f3n se va a reducir dr\u00e1sticamente.<\/p>\n<p>Si no conseguimos que nuestra corteza se seque y lo ponemos a curarse es probable que a lo largo del proceso de curado nos resulte moho u otro tipo de contaminaci\u00f3n que puede echar a perder el resto del proceso.<\/p>\n<p>En todas las fermentaciones, es importante seguir los pasos de las recetas hasta que tengas la suficiente confianza y puedas hacer tus propios experimentos.
