&#8220;ginger bug&#8221; solo necesitamos 3 ingredientes: <strong>jengibre, az\u00facar y agua<\/strong>. Es muy importante usar <strong>jengibre lo m\u00e1s natural y ecol\u00f3gico\/org\u00e1nico<\/strong> posible, para que \u00e9ste tenga su composici\u00f3n microbiana natural, que ser\u00e1 la que va a propiciar la fermentaci\u00f3n y que <strong>no haya sido tratado con pesticidas o irradiado<\/strong>. De esta forma, aseguramos que el alimento contiene vida, de lo contrario no nos servir\u00eda para este prop\u00f3sito.<\/p>\n<p>En cu\u00e1nto al <strong>az\u00facar<\/strong>, recomendamos <a title=\"Az\u00facar de coco ecol\u00f3gico\" href=\"https:\/\/www.conasi.eu\/edulcorantes\/936-azucar-de-coco-ecologica.html\">az\u00facar de coco<\/a>, <a title=\"Panela ecol\u00f3gica\" href=\"https:\/\/www.conasi.eu\/edulcorantes-naturales\/2919-azucar-panela-ecologica.html\">panela<\/a> u otro az\u00facar no refinado y ecol\u00f3gico. De esta forma, se genera un <strong>ambiente propicio<\/strong> para que las bacterias y las levaduras salvajes, naturalmente presentes en el jengibre, se multipliquen.<\/p>\n<p>Es normal observar una <b>capa blanquecina<\/b> en la base del fermento, significa las levaduras est\u00e1n proliferando.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Temperatura\"><\/span>Temperatura<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>La temperatura es un factor clave para el desarrollo de la fermentaci\u00f3n. En el caso de vivir en un <strong>clima fr\u00edo<\/strong>, tardar\u00e1 m\u00e1s d\u00edas, pero situ\u00e1ndolo en el lugar m\u00e1s c\u00e1lido de la cocina o abrig\u00e1ndolo, fermentar\u00e1 mejor.<\/p>\n<p><strong>Si no se activa el fermento<\/strong> puede ser porque hace mucho fr\u00edo, porque necesita m\u00e1s d\u00edas o porque el jengibre no es realmente ecol\u00f3gico.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Como_conservar_la_madre_de_jengibre\"><\/span>C\u00f3mo conservar la madre de jengibre<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>El tarro de cristal con la madre de jengibre, se debe mantener a temperatura ambiente mientras lo estamos alimentando. Otra opci\u00f3n es <b>guardarlo en la nevera para conservarlo <\/b>sin tener que alimentarlo a diario: de esta manera lo alimentaremos una vez a la semana y cuando lo queramos usar, lo sacaremos de la nevera y lo activaremos durante un par de d\u00edas o tres hasta que vuelva a estar burbujeante y listo para la acci\u00f3n.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Como_usar_la_madre_de_jengibre\"><\/span>C\u00f3mo usar la madre de jengibre<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>La madre de jengibre es un concentrado de vida que puede utilizarse para <strong>iniciar la fermentaci\u00f3n de salsas, <a title=\"Receta de chutney de pi\u00f1a y chile\" href=\"https:\/\/www.conasi.eu\/blog\/recetas\/chutney-de-pina-y-chile\/\">chutneys<\/a>, bebidas probi\u00f3ticas<\/strong>, etc. Puedes usar solo la parte l\u00edquida del iniciador col\u00e1ndolo, o la parte s\u00f3lida junto con el l\u00edquido.<\/p>\n<p>Por ejemplo, para realizar la <a title=\"Receta de cerveza de jengibre con ginger bug\" href=\"https:\/\/www.conasi.eu\/blog\/colaboradores-especiales\/macrobiotica-aida-lirola\/cerveza-jengibre-casera\/\"><strong>bebida de jengibre<\/strong><\/a>, usaremos solo el l\u00edquido del iniciador con un poco de pulpa y conservaremos la parte de la pulpa iniciadora con unos 50 ml de l\u00edquido, para crear la siguiente tanda de madre jengibre.
