pan es <b>permitir que la levadura se nutra de los az\u00facares de la harina y espire gases y alcohol<\/b>, lo que hace que el pan se expanda, se leve y adquiera una textura y sabor agradables. Es un m\u00e9todo utilizado para muchos panes artesanales donde se prepara previamente una mezcla de arranque con <strong><a title=\"Harinas ecol\u00f3gicas\" href=\"https:\/\/www.conasi.eu\/25-harinas\">harina<\/a>, agua, <a title=\"Masa madre ecol\u00f3gica de espelta\" href=\"https:\/\/www.conasi.eu\/levaduras-ecologicas-biovegan\/486-masa-madre-ecologica-de-espelta.html\">masa madre<\/a> o <a title=\"Levadura de pan ecol\u00f3gico\" href=\"https:\/\/www.conasi.eu\/levaduras-ecologicas-biovegan\/293-levadura-de-pan-ecologica.html\">levadura<\/a><\/strong>, c\u00f3mo dec\u00edamos, este paso mejora el sabor y la vida \u00fatil del pan.<\/li>\n<li aria-level=\"1\"><b>Primera fermentaci\u00f3n:<\/b> despu\u00e9s de agregar el pre-fermento a la masa final, tiene lugar la primera fermentaci\u00f3n. Esto puede tomar hasta 8 horas para el pan artesanal.<\/li>\n<li aria-level=\"1\"><b>Segunda fermentaci\u00f3n:<\/b> despu\u00e9s del primer amasado, tiene lugar esta segunda etapa. Hay panes en los que esta fase puede implicar tres o m\u00e1s etapas.<\/li>\n<li aria-level=\"1\"><b>Leudado:<\/b> tras el amasado y moldeado, el pan se leuda y se prepara para hornear. Un pan bien fermentado es un pan repleto de matices de sabor, rico en tonos \u00e1cidos, que se conserva varios d\u00edas, que tiene una corteza crujiente y que se forma sobre una miga desarrollada.<\/p>\n<p>Lo interesante es que <strong>el pan fermente un m\u00ednimo de dos o tres veces<\/strong> y ello depender\u00e1 del tipo de pan que vayamos a preparar, ya que fermentar se trata <b>de dejar la masa tranquila el tiempo que necesite para que haga su trabajo <\/b>y haya como m\u00ednimo duplicado su tama\u00f1o indic\u00e1ndonos que ya est\u00e1 lista para ser horneada.<\/p>\n<p>La fermentaci\u00f3n proporciona a la masa del pan cuerpo y fuerza, y estos se traducen en la cualidad necesaria para que el <strong>pan adquiera volumen y esponjosidad en el horno<\/strong>.<\/p>\n<p><b>Un proceso de fermentaci\u00f3n m\u00e1s corto implica que:<\/b><\/p>\n<ul>\n<li>No llega a darse la <strong>fermentaci\u00f3n l\u00e1ctica<\/strong>, la mayor parte de la fermentaci\u00f3n que se da es la alcoh\u00f3lica que permite hinchar la masa, pero no la desarrolla.<\/li>\n<li>El pan tiende a tener <strong>menos sabor y una textura m\u00e1s floja<\/strong>.<\/li>\n<li>Si la masa no ha fermentado lo suficiente, obtendremos un <strong>pan menos nutritivo<\/strong>, de menor calidad y que cuesta m\u00e1s de digerir.<\/li>\n<\/ul>\n<p>En el pan producido de forma no artesanal se emplean <strong>mejorantes de la masa<\/strong> que aceleran y \u201csustituyen\u201d el proceso de fermentaci\u00f3n, el pan se produce r\u00e1pidamente y se da preferencia a la cantidad y la rapidez. Ese ahorro de tiempo va en detrimento de la calidad que proporciona el proceso real de fermentaci\u00f3n del pan.<\/p>\n<p><b>Un proceso de fermentaci\u00f3n m\u00e1s largo implica que:<\/b><\/p>\n<ul>\n<li>Un pan con una <b>mayor profundidad en el sabor y una textura m\u00e1s desarrollada.<\/b><\/li>\n<li>Si la masa ha fermentado bien, el pan es <b>m\u00e1s nutritivo, asimilable y digestivo, <\/b>ya que se ha pre-digerido y transformado el almid\u00f3n.<\/li>\n<li><b>Disminuye su carga gluc\u00e9mica:<\/b> gracias a las fermentaciones largas los microorganismos reducen la glucemia del pan, ya que una mayor proporci\u00f3n de glucosa es transformada.<\/li>\n<li>Es un pan que <b>se conserva mucho mejor<\/b> debido a su mayor acidez y a su nivel de \u00e1cido l\u00e1ctico, debido a que hay una menor oxidaci\u00f3n y a que se mantiene fresco m\u00e1s tiempo sin la necesidad de a\u00f1adir conservantes, permitiendo as\u00ed elaborarlo tambi\u00e9n de forma \u00edntegra con harinas no refinadas.<\/li>\n<li>El pan elaborado paso a paso respetando sus etapas y su tiempo de fermentaci\u00f3n lenta que tranquilamente <b>puede llevar 48 horas<\/b>, es un <strong>pan de verdad<\/strong>: sabroso, rico en nutrientes, aroma y textura.<\/li>\n<\/ul>\n<p><b>\u00bfY cu\u00e1l es el tiempo ideal para fermentar el pan<\/b>? As\u00ed que simplemente hay que configurar la fermentadora a 27 \u00baC y funcionar\u00e1 bien para la mayor\u00eda de los panes. Si tenemos m\u00e1s prisa podemos subir el 32-35 \u00b0C, pero lo ideal es a 27 \u00baC.<\/li>\n<li><b>La masa madre:<\/b> funciona muy bien en un rango de 21-30 \u00b0C. Las temperaturas a m\u00e1s de 30 \u00b0C ayudar\u00e1n a promover la acidez en la masa madre, mientras que las temperaturas menores de 21-24 \u00b0C favorece la levadura y ayudara a crear sabores m\u00e1s suaves.<\/li>\n<li><b>La levadura comercial<\/b>: prospera en un amplio rango de temperaturas. Para un buen equilibrio entre el desarrollo del sabor y la actividad de la levadura se recomienda una temperatura 24-26 \u00b0 C<\/li>\n<li><b>Masas dulces y croissants:<\/b> funcionan bien a 27 o 29\u00b0C si est\u00e1n fr\u00edas de la nevera.<\/li>\n<li><b><a title=\"Pan de centeno en panificadora Sana\" href=\"https:\/\/www.conasi.eu\/blog\/recetas\/pan-de-centeno-100-sana\/\">Pan de centeno<\/a>:<\/b> tiene un gluten m\u00e1s d\u00e9bil y una mayor actividad enzim\u00e1tica que los panes de trigo. Un ajuste de la temperatura de fermentaci\u00f3n de entre 27-30 \u00b0C acortar\u00e1 el tiempo de fermentaci\u00f3n y ayudar\u00e1 a evitar que las enzimas degraden la masa demasiado r\u00e1pido.<\/li>\n<li><b>Las masas fr\u00edas<\/b> fermentadas en la nevera necesitan como m\u00ednimo una hora extra de fermentaci\u00f3n por cada 500 g de peso, por otro lado, <b>las masas congeladas<\/b> deben descongelarse en la nevera antes de fermentar.<\/li>\n<li><b>Pan r\u00e1pido:<\/b> mezclar la masa con agua tibia a 38 \u00b0C, luego fermentar a 30-32 \u00b0C. Las temperaturas superiores a 32 \u00b0C pueden afectar negativamente el sabor de los panes de levadura.<\/li>\n<li><b>Los pre-fermentos<\/b> que necesitan un levado lento durante horas, les conviene mejor una temperatura suave para ayudar a garantizar que no fermenten en exceso, se recomienda fermentar a 21-22\u00b0C.<\/li>\n<\/ul>\n<h3><span class=\"ez-toc-section\" id=\"La_humedad\"><\/span>La humedad<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>A las masas les encanta la humedad y aborrecen los ambientes secos, por eso <b>una humedad ideal de entre el 60 y el 80%<\/b> es necesaria para que se produzca un buen levado y no se forme una costra en la corteza del pan.<\/p>\n<p>En la <a title=\"Fermentadora Brod&amp;Taylor\" href=\"https:\/\/www.conasi.eu\/fermentadoras\/1626-fermentadora-slow-cooker-brod-taylor.html\">fermentadora Brod &amp; Taylor<\/a> creamos la humedad con la bandeja de agua que colocamos debajo de la rejilla, para ayudar as\u00ed a mantener la humedad ideal. En ese caso no es necesario cubrir la masa, de lo contrario, si vamos a realizar una fermentaci\u00f3n larga, de m\u00e1s de 12 horas, ser\u00e1 conveniente cubrir el recipiente con un pa\u00f1o h\u00famedo. Por ejemplo, un <strong>pre-fermento nocturno<\/strong> que aumentar\u00e1 a 21 \u00b0C debe mezclarse con agua que est\u00e9 cerca de 21\u00b0C. Y una masa que ser\u00e1 fermentada a 30\u00b0C debe mezclarse con agua tibia.
